How I make bread in times like this:
I clean the kitchen with my
fingernails and a soft cloth,
then take out the bowls and boards.
I look out the window, I close the door
on the plants so I won’t disgust them,
I have some tea, I apologize
I wipe up the mess, I let the yeast
breathe before I use it. I roll the dough,
I let it rest, I punch it down,
roll and punch, roll and punch
I put my head in the oven
just to make sure it’s safe.
Then I bake several crusty loaves.
